Knee suddenly give way - instability for a couple of days

I am 58 years old, have done Crossfit for the last 8 years and have got chondromalacia in both knees, whilst from time to time I have eased up on my efforts, when they begin to swell.
The chondromalacia was caused by IT BAND issues and has since been identified. I have been working on the relevant stretches.
Basically, I would consider my muscle strength in my legs very good for my age - I can squat 110Kg, deadlift 170Kgs, and exercise 3-4 times a week at high-level intensity.
So reading the answers above doesn't seem to equate to what's going on in my case. The knee randomly gets loose maybe for a day or two then everything is ok for weeks if not months...... then BINGO.
If it was damage to any of the muscles that caused the intermittent weakness then logic tells me that unless that damage is repaired the weakness will remain.
However, in my case my leg went out last Saturday, today I can squat 100kgs with no pain. It's normal again till next time.
    Any ideas/advice?
