    Like most of you in the weight maagement community I am a busy working mother and always in search for easy, healthy and delicious dinner ideas! Mid week dinners are always a challenge - what to make with such little time! I thought we could all benefit from sharing some easy, healthy and delicious dinner ideas! I'm going to kick it off- please share yours too! After all we can all benefit!



    Delicious and EASY baked OceanTrout (Or you can use atlantic salmon)

    1/3 cup soy sauce1/3 cup sweet chilli sauce2 TBS seeded mustard (wholegrain mustard)2 TBS honey

    Mix the above together and pour over the ocean trout or atlantic salmon and bake it in the oven (180 deg) for approx. 20 mins- keep an eye on it- less if you like the fish raw on the inside and more if you like it well done!



    Serve with basmati rice (low GI) and salad.

    That sounds delish. We try to have ocean trout/ salmon once a week so variety is welcomed. Thanks

    Here's a delicious side I love making that goes great with grilled/ lightly pan-fried Ocean Trout or Salmon. Enjoy!



    Ginger Zucchini Bake





    Ingredients6 zucchini, trimmed, halved and cut into 2cm pieces2 tablespoons ginger, finely grated4 eggs, whisked250g grated Parmesan

    Preheat oven to 180°C/ 160°C fan-forced.Bring a large saucepan of water to boil. Briefly blanch zucchini for around 3-4 minutes to just soften it slightly. Drain really well and spread evenly in a large glass or ceramic baking dish.Whisk ginger, egg and half the parmesan cheese together. Pour mixture evenly over zucchini. Sprinkle remaining Parmesan on top and bake for around 15 minutes until egg is cooked and cheese is turning golden.From Gestational Diabetes Recipes Lisa
