This is a safety issue, and you will have to contact the hang-gliding company to see what they are willing to do as they also have insurance concerns. From a safety perspective, the best option for you is to be seizure free for a period that you feel comfortable the seizures may be under control – say several months. Having a seizure whilst in the air could prove risky to both parties, so you should be confident about seizure control before attempting this sport.
